Leftover Easter Candy Brownies and Two Healthy Pizza Crust Recipes

It's time to use up that leftover Easter candy! And I found a perfect recipe using Reese's Peanut Butter Cups. I am here to say that these babies are the BOMB! You might want to drop whatever you are doing right now and just make these! Click HERE for the recipe.

Now this recipe does call for rice krispies, but if you don't have any around, you could just top the brownies with the chopped up peanut butter cups and call it a day. Let's get creative with what we have right???!!!!

I don't know about you but it has not been easy to stay healthy during this quarantine. And I suppose making these brownies has not helped, however, I did find two healthy pizza crusts recipes. We made a low carb friendly recipe and a whole wheat recipe. Here is my take on the two recipes.

The low carb pizza crust was OK - not awful, but not amazing. If you have ever been on a low carb diet then you know that A LOT of things are made with eggs and many recipes can get a little eggy. I was pleasantly surprised that this recipe did not taste that eggy but I definitely preferred the whole wheat crust over this one.

I do need to tweak the whole wheat pizza crust recipe a little bit and will let you know how it goes because it is super easy to make and REALLY good. Jason and I also made a homemade ranch dressing (recipe HERE) and put spinach and red onion on our pizza and it was DELICIOUS!

Our family is having fun making new things and we will keep sharing our recipes along the way.

As noted by the title, mom decided to try out some new recipes this week! It’s really quite unfortunate however because we already have portillos cake, ice cream cake, Easter candy and cookies in our house from Kate’s birthday and Easter of course. Am I complaining about the delicious new pizza recipe or amazing brownies, no!! But it is for sure NOT needed in this household right now- I do not have the willpower for this!

The Reese’s Peanut Butter Cup brownies are INSANE!!! My mom made the top, rice crispy chocolate/peanut butter layer a litttllleee too thick BUT they are still so frickin delicious!! I have always loved the 3-tier brownies with the frosting and peanuts and chocolate rice crispy top, but I do think these are much better! I think it’s because I like the peanut butter cup middle more instead of the straight peanuts!! Absolute must try to use up the leftover peanut butter cups!! My mouth is legit watering just thinking about them!

Now the pizza crust on the other hand... :/

IM JOKING!! But also, definitely not as good as the brownies!! The pizza crust was definitely a delicious healthy version of pizza crust, not any Lou Malnatis crust or anything!! I am giving tons of credit to my mom because it was her first time making it but it definitely could have been a bit more crispy and thin!! If it’s not crispy enough and too thick, it kinda just tastes like bread with pizza toppings😂 I would definitely recommend trying though because it’s a perfect, healthier version of pizza crust!!

Whether or not you want to admit it, you’re going to be eating Easter candy at some point during this quarantine so just bake them into the these amazing brownies! And what else are you gonna do with your time other than make a wonderful, simple pizza crust for the fam?! For sure recipes that you need to try during quarantine!! What new recipes have you tried during quarantine????
