Gluten Free Almond Blondies (can also be dairy free)


I have to say that these are INCREDIBLE!!!! I made them gluten free and dairy free and they came out even better! I used coconut oil and it gave it a slight coconut taste that I loved! But you could use any other oil if not using butter. I also used Enjoy Life chocolate chips that are dairy free. Enjoy!


INGREDIENTS


1/2 cup butter or coconut oil


3/4 cup brown sugar


1/2 cup white sugar


2 eggs


2 teaspoons vanilla


1 3/4 cup almond flour


1 teaspoon baking powder


1/2 teaspoon salt


1 cup chocolate chips (I used Enjoy Life chocolate chips)


1/2 cup chopped pecans optional


DIRECTIONS

  • Preheat the oven to 350 degrees. Lightly grease a 9x13 baking pan.

  • In the bowl of a standard mixer, cream together the butter and sugars. Add the eggs and vanilla and mix on high until light and fluffy, about 3 minutes.

  • Add the almond flour, baking powder, and salt. Mix to fully incorporate. Stir in the chocolate chips and pecans.

  • Bake for 20-25 minutes, until golden. Allow to cool for 15 minutes.
